Chocolate mousse (Gluten Free and Dairy Free Recipe)

For 6 ramekins                                                               Gluten Free and Dairy Free Recipe
  • 6 eggs
  • 200g of dark chocolate
  • 15ml of hot water
  • Pinch of salt

Separate the eggs, placing the whites into a roomy bowl.

Break the chocolate into small pieces and put them in another roomy bowl set over a pan of simmering water. While stirring occasionally, add the hot water to obtain a liquid texture.

In the meantime, add a pinch of salt to the egg whites and whisk into a froth (soft peaks).

Once the chocolate has melted, let it cool for a couple of minutes and then stir in the yolks.

The egg whites need to be "folded" into the chocolate in many batches. "Folding" in consists of sliding the spatula or spoon along the bottom of the bowl and then lifting it up the side. This gentle motion is used to mix the ingredients without losing the air bubbles trapped in the beaten egg. (Careful: stirring instead of "folding" would burst too many of the precious air bubbles, resulting in a flat mousse)

Pour into ramekins and refrigerate for a couple of hours.
