- 200g of millet flour (ideally, else any gluten-free flour blend)
- 100g of gluten-free flour blend
- 200g of white crystal sugar
- 100g of dairy-free margarine
- 1 tea spoon of gluten-free baking powder
- 2 eggs
- 160g of dark chocolate chips
- 100g of pecan nuts
- 50g of desiccated coconut
- 1 tea spoon of vanilla extract
- Pinch of salt
In a large mixing bowl, combine the millet flour, gluten-free flour blend, gluten-free baking powder, white crystal sugar and salt.
Melt the margarine and pour it into a separate mixing bowl. After letting it cool for 2 minutes, beat in the eggs and pour in the vanilla extract. Add the mixture to the first mixing bowl and stir until thoroughly mixed.
Stir in the chocolate chips, chopped pecan nuts and desiccated coconut.
Arrange heaped teaspoons of mixture on a baking tray covered with greaseproof paper, leaving plenty of space in between each one. Leave in oven for about 10 minutes.
