Leek and Ham Muffins (Gluten Free and Dairy Free Recipe)

  • 280g of gluten-free flour blend
  • 3 tea spoons of gluten-free baking powder
  • 1 leek
  • 150g of cooked ham
  • 1 egg
  • 300ml of soya yogurt
  • 55g of dairy-free margarine
  • 2 table spoons of vegetable oil
  • 25g of fresh chives

Preheat the oven to 200°C. Oil a muffin tin with vegetable oil or line it with muffin paper cases.

Heat the vegetable oil in a frying pan. Finely chop the leek and add it to the pan. Cook it over a low heat for 2 minutes while stirring.

Sift the flour and baking powder into a large mixing bowl.
In a separate bowl, mix together the egg, soya yogurt and melted margarine. Add the cooked leek. Chop the ham and add it. Finely snip the chives and add it. Combine it with the flour and gently stir together.

Divide the mixture between the 12 cups in the muffin tin or the paper cases (they should be about two-thirds full). Bake for about 20 minutes until risen and golden. Serve them warm.
