No-pastry Two Salmon Quiche (Gluten Free and Dairy Free Recipe)

For 4 to 6 people                                                                Gluten Free and Dairy Free Recipe
  • 4 eggs
  • 50cl of soya single cream (or soya milk)
  • 150g of fresh salmon
  • 150g of smoked salmon
  • 1 tomate
  • 1 courgette
  • 1 onion
  • vegetable oil
  • salt and pepper
  • pinch of nutmeg
Preheat the oven to 200°C. Oil a quiche tin with vegetable oil.

Chop the onion and cook it in a pan for about 5 mins. Slice the courgette thinly and add it to the pan. After 10 mins cooking, put aside in a mixing bowl.

Chop the fresh salmon and cook it for about 10 mins. Add to the mixing bowl.

In a separate mixing bowl, mix the eggs and soya single cream, and add to the first mixing bowl. Add the chopped tomato, salt, pepper and nutmeg.

In the quiche tin, spread the trimmed smoked salmon and pour the mixture on top of it.

Bake for about 30 minutes until a knife inserted near the center comes out clean.
